Everyone has a favorite homemade granola recipe. Here's mine!
Dry Ingredients:
3 cups old-fashioned rolled oats
3 cups oats, ground up in a coffee grinder
2 cups puffed rice
Syrup:
1 1/2 tsp cinnamon
3/4 tsp fine sea salt
6 oz virgin coconut oil or palm oil
4.5 oz sweeteners (mix & match: honey, brown rice syrup, brown sugar, xylitol...)
2 tsp vanilla
Instructions:
Preheat oven to 350 F (Convection: 325 F)
Combine dry ingredients in the bowl of a stand mixer fitted with a paddle attachment. Combine cinnamon, salt, sweeteners, and oil in a small saucepan over medium heat. Stir occasionally until bubbly. Remove from heat and stir in vanilla. Set the mixer on Low and slowly pour in the syrup until evenly distributed.
Pour into one 9"x13" pan and one 8"x8" pan. Set them side by side in the oven. Bake for 12 minutes and turn the oven off. Leave pans in the oven with the door closed until the granola is cool and dry - at least 3 hours. Break it up, store in airtight containers at room temperature, and enjoy!
Makes 2 pounds of granola for around $5.
Variations:
-Substitute one cup of garbanzo bean flour for one cup of the oat flour
-Substitute one cup of shredded coconut for one cup of the oat flour
-Substitute one or two ounces of almond butter for the oil
-Add nuts and dried fruit
